EFAs
Good sources of fat contain unsaturated fatty acids. The key components of good fats are the essential fatty acids. Omega-3 and Omega-6 fatty acids are unsaturated oils that are considered essential because the human body must have them, but cannot manufacture them on its own. Therefore, the body must rely on the foods we eat as its source for good fats. Omega-3 fatty acids include Linoleic Acid (LA), and Docosahexaenic Acid (DHA) while Omega-6 fatty acids include Alpha Linolenic Acid (LNA) and Gamma-Linolenic Acid (GLA). Omega-6 fatty acids are more common in the American diet than the Omega-3 fatty acids. This imbalance is due to several factors, such as the increased consumption of oils void of Omega-3 fatty acids, the industrial milling of flour, also the increase of sugar and fried foods and the decreased consumption of fish.

Optimal EFA
Omega-3 and Omega-6 fatty acids are very sensitive; light, heat and oxygen can destroy them. Light and heat can be avoided by keeping them in dark bottles in the refrigerator. The main problem with most EFA products on the market today is the inability of keeping them fresh because of their exposure to oxygen.
